Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup tahini
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 2-4 tablespoons warm water (to thin)
  • Fresh parsley, chopped (for garnish)

Instructions:

  • For the dressing, whisk together tahini, lemon juice, minced garlic, and a pinch of salt. Add warm water one tablespoon at a time until you reach a pourable consistency.
