Ingredients:

  • 2 tablespoons olive oil, divided

  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon smoked paprika

  • A drizzle of coconut milk or olive oil for serving (optional)

Instructions:

  • In a large pot, heat the remaining olive oil over medium heat. Add the diced onion and garlic, sautéing until soft and translucent.
  • Add the roasted cauliflower and chickpeas to the pot, reserving a few for garnish if desired. Stir in the ground cumin, turmeric, and smoked paprika.
  • Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes, allowing the flavors to meld.
  • Using an immersion blender, blend the soup until smooth and creamy. Adjust the seasoning with salt and pepper to taste.
